slow cooker chicken and mushroom stroganoff

Whenever the Man Friend was in Pittsburgh and I was at home packing in Texas (no, I'm not mad, but the man will owe me several more nice date nights), my family kindly invited me over for dinner multiple times. I figured they knew I was eating cereal and PB&J's, because I hate cooking for one. 

My sweet sister-in-law asked if I wanted to share their dinner one evening, and this quickly became one of my favorite crockpot meals! It's really easy, flavorful, and fast. Luckily for me, they were also moving, so it helped them with cleaning out their pantry, as well.

Also, forgive the horrible photo - all I had was my iPhone and I was starving. Consider yourselves lucky that there was even a pic at all!

prep time: 10 minutes | cook time: 4-6 hours (depending on your slow cooker)

  • 4 large boneless skinless chicken breasts, cubed into bite-sized pieces
  • 8 ounces mushrooms, sliced (I'm a big fan of baby 'bellas)
  • 2 cloves garlic, crushed
  • 8 ounces cream cheese or Neufchâtel, softened and cubed
  • 1 10 1/2 ounce can "healthy" condensed cream of chicken soup
  • 1/2 envelope dry onion soup mix
  • 1 tsp Serendity seasoning or other seasoned salt blend
  • ground pepper to taste
  • fresh parsley, chopped 
  • 1 pound large egg noodles, cooked 

Mist your slow cooker with nonstick cooking spray. Place the chicken breasts in the bottom of the slow cooker and layer the sliced mushrooms on top.

In a separate bowl, carefully combine the cream cheese, soups, Serendipity, and ground pepper. Mix well until combined, then pour over the chicken. Cook on low for 4-6 hours.

About 20-30 minutes before the chicken is finished, prepare the egg noodles according to package directions. You can either stir the cooked noodles directly into the pot with the chicken or you can opt to serve the chicken on top of the noodles.

Either way, sprinkle the stroganoff with fresh parsley and salt and pepper to taste.

Pro Tip: My slow cooker is on crack - the low setting only takes about 4 hours to cook chicken. Be sure to keep track of how fast it cooks to avoid overcooked meals. It's usually preferential to try out new slow cookers during a time when you're home on the weekend to better gauge how long it takes.
