Confession time: breakfast is my least favorite meal of the day.

I know, I know. It's the most important meal of the day. It gets you started. Breakfast means brain power. Yada, yada, yada.

I'm perfectly happy with coffee and yogurt for breakfast. However, I'm of the age where I realize that they (whoever "they" are, actually) might be right. I'm usually pretty busy in the mornings, so here are a few of my favorite quick recipes for breakfast on the go.

These recipes are all considered easy-peasy and take less than 10 minutes. Since these are so easy, the instructions will be minimal.

avo-toast

There are a ton of recipes for avocado on toast, but my favorite is super simple.

  • 1 slice whole wheat bread, toasted
  • 1/2 small avocado
  • 1 egg (hard-boiled egg if I have them made, poached or soft-boiled if I don't)
  • a sprinkle of Cajun seasoning

Layer the avocado on top of the toasted bread. Top with the egg and a sprinkle of Cajun seasoning.

cherry-berry protein smoothie

  • 1/4 cup frozen cherries
  • 1/4 cup frozen strawberries
  • 1/3 cup unsweetened vanilla almond milk
  • 1/4 cup plain nonfat Greek yogurt
  • 2 scoops vanilla protein powder (my personal favorite is Tera's Whey)
  • 1 tsp vanilla extract
  • 1 small squeeze local honey (about 1/2 tbsp)

Using a submersion blender, blend all ingredients until smooth, adding a bit more almond milk if needed to obtain the right consistency.

apple pie oatmeal

  • 1/3 cup plain instant oatmeal
  • 2/3 cup + 2 tbsp hot water
  • Half of one small gala apple, cored and finely chopped
  • 1 tsp raw sugar or honey
  • 1/2 cinnamon (try Penzey's blend...it's seriously the best!)

Place oatmeal, water, and apple into a microwave safe coffee mug. Cook in 30 second intervals until the oatmeal is cooked. Stir in the sweetener and honey.

pbbs english muffin

  • 1 whole wheat English muffin, toasted
  • 1 tbsp natural peanut butter
  • Half of one medium banana, sliced
  • 3 large strawberries, sliced

Spread 1/2 tbsp of peanut butter on each slice of the English muffin. Even split the sliced fruit on top.

Or, you can be lazy like me and grab a second cup of coffee and a Quest bar, instead.
