dijon, herb, & garlic salmon with parmesan

I am all about easy meals. Especially during the week. In the middle of summer. When it's hot and I don't feel like I can eat anything but ice cream for dinner.

Seriously, though. The Man Friend and I are usually pretty anti-going out, simply because of how crowded the restaurants are where we live (introverts, unite!). Also, I can *usually* make a meal faster, better, and cheaper at home. So we like to be fancy by having fish on Fridays. No religious reason...usually just whatever happened to be on sale that day. And it's usually when I've had time to run to the grocery store.

This is one of my go-to easy peasy dishes. You can make it on the grill or in the oven. Totally your call. You don't have to wait until the weekend...this recipe is quick enough to make it any time.

  • 1 pound salmon fillets, cut into 4 pieces
  • 4-5 cloves garlic, minced
  • 3 tbsp fresh parsley, chopped
  • 1 tbsp stone ground mustard
  • 1 tbsp light olive oil
  • 2 tbsp lemon juice (fresh is better)
  • 1/4 cup shredded Parmesan cheese
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes

Preheat oven to 450 degrees Fahrenheit / 232 degrees Celsius.

Line a cookie sheet or shallow baking pan with foil and mist it with nonstick cooking spray. This is critical, unless you enjoy cleaning up disastrous messes, having fish skin stuck to your pans, or just want to throw away cookware. If any of those apply, skip this step and you do you. 

Place the salmon pieces onto the sheet, skin-side down.

Mix the remaining ingredients in a small bowl. Divide among the fillets and spread the mixture on top of each fillet so that it's evenly covered.

Bake uncovered until the fish is cooked through and flakes away easily with fork.

If you're so inclined, pop the oven on broil for a few minutes to char the topping. It makes it even more crunchy and delicious.
